papa's peanut patties

This is another magic recipe of my father-in-laws we all make it every holiday. They never hang around long to go stale. They are great in gift baskets, and the kids just love them. These are great because you can change them up by using other kinds of nuts or adding a bit of chili powder to them and give them a bit of a kick. Great at parties or get togethers with hot chocolate, coffee, milk, alcoholic drinks, non-alcoholic drinks, kids holiday parties at school or at home, anywhere.....ENJOY!!!!!!

Ingredients For papa's peanut patties

  • 2 1/2 c
    sugar
  • 2/3 c
    corn syrup, light (karo)
  • 1 tsp
    vanilla extract
  • 3 lb
    butter
  • 1 c
    cream
  • 3 c
    peanuts, raw (regular or spanish)

How To Make papa's peanut patties

    Lay out wax paper spray with butter spray so it is ready to use. In Sauce pan all ingredients except peanuts, med heat, bring to boil, using candy thermometer....boil to soft ball stage approx. 1 hr stirring constantly...

    Then add 3C Nuts...fold in...remove from heat, immediately to wax paper and start dropping by teaspoonful onto wax paper as fast as you can... the candy will thicken fast if need be return to stove and heat just a bit to soften a bit to return to the liquid stage once more.

    Let candy cool completely before storing... If you want to add food coloring to it you may but we like ours O-Natural.....
