Microwave Homemade Caramels

"I always hated to make homemade caramels at Christmas because of how time consuming they are. I knew there had to be an easier way. I found it! now no more stirring forever and hoping they don't burn. Now if I could just find a shortcut to wrapping them."


1 c
butter, melted
2 c
brown sugar
1 c
light corn syrup
14 oz
sweetened condensed milk
1 tsp
vanilla extract

Directions Step-By-Step

mix butter, brown sugar and corn syrup together in large microwave safe bowl.
cook on high for 5 minutes. Blend in sweetened condensed milk and cook on high an additional 10 minutes, stirring occasionally. remove from microwave and add vanilla, stirring until well mixed and smooth. Pour into buttered 9x13 pan. Cool well. Cut into small squares and wrap in wax paper.

I have never tried covering them with chocolate but wow that sounds good! gonna try that with a few batches this year. We give these every year as Christmas presents to the kids teachers.

Okay, this is my last post on this recipe. Let me say, I'm with Gail on this one...... I've never tried making caramel before because of the huge chance on messing it up....But these are fabulous....I just poured the mixture into the pan a few minutes ago, and it's on the counter cooling, and while I'm waiting I decided to clean the bowl I used to make them.......Yeah, it got scraped clean before it hit the Gonna have to hide these or give them all away, otherwise I'm going to end up eating the entire batch!!! Covering half of the batch with melted chocolate, and the other half leaving it plain.

Oooh, I've also got some leftover coffee, thinking of adding some coffee flavor to a batch.

Has anyone tried any variations of this recipe? I'm just curious, as I've got left over chocolate chips, and was thinking of melting them down, and pouring the chocolate over the finished caramel, before cutting and wrapping. Any ideas as to how well it'll work?

Okay, I just discovered this, and am on a baking spree tonight (yes, it's 10:30pm and I'm in the middle of baking nearly a dozen different types of cookies, brownies, and other goodies...) Getting ready to throw the ingrediants in the bowl and in the microwave right now! Thank you!
