HealthyCoconut Oil Peanut Butter Fudge(my version)

|1/4 c||natural sugar(sucanat or turbinado)|
|1 Tbsp||maple syrup or honey|
|3/4 c||coconut oil*|
|1/2 c||natural peanut butter|

Directionsmelt butter in saucepan and add sugar and syrup or honey. Bring to a boil, reduce heat and boil gently for about 2 min. Remove from heat and stir in coconut oil and vanilla. Add peanut butter and blend well. (You may want to use a food processor or immersion blender to get the ingredients to really come together. Otherwise just whisk the living daylights out of it!) Pour into a buttered 8x8 pan and place in refrigerator until set up. Cut in small squares. Store in fridge.*The best option is extra virgin coconut oil. However, your fudge will have a coconut-y taste if you use it. If that's a problem for you, you can use a more refined oil like Spectrum or Luanna that have a more neutral taste.
