We call these "Girl Scout" Popcorn Balls because my mother came up with a recipe so I could take them as treats to Girl Scout meetings. There was a classmate of mine in the troop that was diabetic so she could not eat most of the treats other members would bring each week (usually cookies). Mom found out that she could eat rice crispy treats and came up with this idea. Tips: You can also use large marshmallows, but the miniature ones melt faster. If you use regular/large marshmallow, it takes 40 of them. The amount of popcorn varies based on your taste. Mom used to fill a large roasting pan 3/4 full of popped popcorn to make these. To keep for a couple days (if they last that long), wrap in plastic wrap or sandwich baggies. Add a few drops of food coloring to the melted marshmallow mixture before mixing with popcorn for a festive and fun treat (orange/black for Halloween or red/green for Christmas).

Ingredients For girl scout popcorn balls

  • 8-11 c
    plain popped popcorn with the hulls and un-popped kernels removed (as much as possible)
  • 1 pkg
    (~10 oz) miniature marshmallows
  • 8 Tbsp
    butter or margarine
  • 1
    3 qt. pan with thick bottom to melt marshmallows
  • 1
    large pan or bowl (i.e. large roasting pan)
  • 2-4 Tbsp
    additional butter or margarine

How To Make girl scout popcorn balls

    Put popped popcorn in the huge pan or bowl (it should have enough room to stir).

    In 3 qt pan, melt butter. Add and melt marshmallows. Stirring constantly (or at least very frequently).

    Pour marshmallow mixture over the pop corn. Stir and coat popcorn evenly.

    Use additional butter on the inside of your hands. Form the mixture into balls.
