- 4 c
- powdered sugar
- 1/3 c
- lite corn syrup
- 1/2 tsp
- peppermint oil/or extract
- cornstarch for dusting purposes
- 1 pkg
- 16 oz bag of semi-sweet chocolate chips
1in medium bowl(not plastic) beat whites until stiff peaks form.
slowly add powdered sugar
with electric mixer on medium speed. towards end of mixing, I use a gloved hand to mix.
Add corn syrup and peppermint and need mixture until smooth with hand until dough consistancy.
2Roll out dough to 1/4 inch thickness and use 2-21/2 inch circle cut out for guide and place dusted cut-out on a cookie sheet in fridge.
let firm for 45 minutes.
3Melt chocolate chips in microwave being careful not to scortch chocolate. OR do on top of a double boiler. Drop each patty one at a time in the melted chips and chill until firm. About half hour or so. ~~~Enjoy ~~~ and please share!
