Ingredients For father's day bacon peanut brittle

  • 1 lb
    bacon
  • 1 1/4 c
    dark brown sugar, firmly packed
  • 1/4 c
    sugar
  • 1/4 c
    corn syrup, light
  • 2 Tbsp
    water
  • 1/2 c
    roasted salted peanuts, chopped
  • 1 Tbsp
    butter, unsalted, room temperature
  • 1/2 tsp
    baking soda
  • 2 Tbsp
    peanut butter, creamy
  • 2 Tbsp
    heavy cream
  • 1/2 c
    confectioners' sugar

    Preheat oven to 375 degrees F. Line a rimmed baking sheet with foil; top with cooling rack. Coat with cooking spray. Arrange bacon on rack. Sprinkle each slice with 2 tsp brown sugar; press lightly to adhere; flip bacon over. Sprinkle each with 2 tsp sugar; press lightly to adhere. Bake 15 minutes. Flip bacon over. Bake an additional 7 - 10 minutes or until crisp, checking frequently so it doesn't burn. Cool; chop.

    Line another baking sheet with parchment paper or silpat liner. In a pot, add remaining sugars, corn syrup & water. Over medium high heat, bring to boil, stirring. Stir in bacon & peanuts. Cook, stirring, until candy thermometer registers 300 degrees F., about 5 - 10 minutes. Remove from heat; immediately stir in butter & soda until completely blended. BE CAREFULL MIXTURE WILL BUBBLE & SPATTER! Immediately spread mixture onto prepared lined baking sheet. Score with knife. Cool & break into pieces.

    Mix peanut butter & cream. Stir in confectioners'. Transfer to pastry bag with small round tip & pipe over brittle.
