easy peanut brittle

I love to bake candies and cookies. I used to make peanut brittle for my family and friends, but eight years ago when I moved closer to the mountains I found my peanut brittle wouldn't set. I tried several different recipes without success, so I stopped making it and went on to other candies. Recently I have found a website where I can purchase raw Georgia peanuts online and have them delivered. They are scrumptious! This recipe is an altered version of the recipe on the back of the canvas bag used to store the peanuts for delivery. If Georgia can grow peanuts, they know how to make brittle!

Ingredients For easy peanut brittle

  • 1 1/2 c
    raw georgia peanuts, skins on
  • 1 c
    granulated sugar
  • 1/2 c
    light corn syrup
  • 1/8 tsp
    salt
  • 1 Tbsp
    butter
  • 1/2 tsp
    vanilla
  • 1/2 tsp
    coconut flavoring
  • 1 tsp
    baking soda

How To Make easy peanut brittle

    Lightly grease a large baking sheet. Set aside.

    In 1.5 quart microwave safe bowl, stir together peanuts, sugar, corn syrup, and salt. Cook in microwave on high for 8 minutes, stirring well after 4 minutes and again at the end of the 8 minutes.

    Immediately stir in vanilla, coconut flavoring, and butter. Microwave on high for 2 minutes.

    Immediately add baking soda and quickly stir until light and foamy. The candy will foam up as soon as you begin stirring, so make sure you stir quickly and thoroughly. Wooden spoon works the best for me.

    Immediately pour foamy candy onto lightly greased baking sheet and quickly spread out with spoon to desired thickness. I find the thicker I leave it, the fluffier and crunchier the candy (air holes). If I spread it thin it becomes a harder brittle. My family likes it both ways, so I spread one end thinner.

    When the candy cools, break it into pieces and store in airtight container.

    ** I have a 1,000 watt microwave oven. Cooking times can vary depending on the microwave wattage, so don't be disappointed if it doesn't work the first time - try again. ENJOY!
