DARK CHOCOLATE BARK WITH WALNUTS & DRIED CHERRIES

- walnut halves (6oz)
- 9 oz
- bittersweet chocolate,finely chopped
- 1 c
- dried sour cherries (4oz), coarsley chopped
- 2 Tbsp
- finely chopped crystallized ginger
1Preheat oven to 350 degrees.
Spread walnuts on baking sheet and toast for 8 minutes. Let cool, then chop.
2Line baking sheet with parchment. In a glass bowl, heat 2/3 of the chocolate in the microwave on high power in 30 seconds bursts until just melted. Stir in remaining chocolate and stir.
3Stir in walnuts, cherries and Ginger until evenly coated.
4Scrape all onto prepared baking sheet into a 12x8 rectangle. Refrigerate 10 minutes.
