This is a cute little candy that can be used as a party favor or just for the holidays. I have not made them yet for this year, but it resembles a mini cupcake. It just a perfect little bite of peanut butter and whatever kind of frosting you decide to use. They look wonderful on a tray of goodies and they are so easy to make. It is a little different from fudge but tastes just a good. You can decorate them as intricate as you like or just a simple rosette or button. Enjoy.

Ingredients For cupcake peanut butter mints

  • 3 3/4 c
    confectioners' sugar
  • 1/2 c
    butter
  • 1/2 tsp
    peanut butter extract
  • 1 tsp
    whipping cream
  • granulated sugar to roll candy in
  • FROSTING
  • your favorite frosting

How To Make cupcake peanut butter mints

    Soften butter and combine with a mixer the confectioners sugar. Add ½ tsp of peanut butter extract and whipping cream starting out with ½ tsp but you may need to add a little more. The mixture should be like play dough.

    For this part I used a cap from a Gatorade bottle as they are a nice size, but if you have candy mold that would definitely work better. Pinch off a small piece of the candy and roll in the granulated sugar and press into the Gatorade lid. Then remove and place on a piece of parchment paper on a cookie sheet.

    With your favorite frosting, pipe a rosette in the middle of the candy you can use a plastic bag also. Allow them to air dry for about 1 hour then cover them and let them set overnight.
