My mom used to make these. I think they are much better than store bought. Family and friends agree! The time estimate is just a guess. I know it takes a long time to bring ingredients to a boil over low heat, but if you do it on a higher heat, it will burn. Also, don't scrape the sides of the pan as it will cause candy to form crystals and be grainy. We make these every year for Christmas and everyone looks forward to them. Enjoy!

Ingredients For cream caramels

  • 1/2 c
    chopped nuts (i use walnuts)
  • 2 c
    granulated sugar
  • 3/4 c
    light corn syrup
  • 1/2 c
    butter
  • 1 c
    cream

How To Make cream caramels

    Sprinkle the chopped nuts evenly on the bottom of a buttered 8 inch square pan.

    Mix sugar, corn syrup, butter and cream in a saucepan and bring to a boil over low heat, stirring constantly. Gradually stir in the cream. Continue to stir as mixture thickens, and cook to 250 degrees, or until a little dropped in cold water forms a hard ball. Remove from heat and pour over the nuts in the pan.

    Refrigerate. When cold, cut into squares.
