A simple fudge-like candy with cranberries sandwiched between layers of white "fudgey" candy. My Mom got this recipe from a newspaper years ago.

8 oz
cream cheese
2 lb
powdered sugar
1 tsp
almond extract
1 c
chopped almonds
1 c
cranberries, rinsed and well drained


1In a bowl, beat cream cheese until light and fluffy. Gradually beat in powdered sugar. Beat in almond extract. Knead in almonds.

2Place cranberries evenly over fudge. Cover with remaining fudge and press until even. Chill for several hours. Cut into squares with a sharp knife. Store in refrigerator until ready to serve.

3NOTE: You may add 2 tablespoons sugar to the cranberries if they seem too sour.
