I made these on Sunday with my grandson and he loved it. I did not have my camera with me but we will be making them again for his class for their Christmas party so I will take a picture then. He spread peanut butter on them and I dipped them, and he rolled them in the jimmy's. The peanut butter does melt a little when you dip it in the melted chocolate but it will not matter. Just keep the chocolate hot enough so that it is slightly melted. If the peanut butter will not stick to the marshmallow you may have to soften it in the microwave, but let it set up before dipping in the chocolate.
Lay out a piece of wax paper on a large cookie sheet that will hold all of the marshmallows. Spread the marshmallows with peanut butter and put a toothpick in each marshmallow and put it on the wax paper.
Melt the chocolate chips in a double boiler or put a dish over boiling hot water and as soon as the chips melt you will want to put it on low. You will not want to put these in the microwave because it does take time and the chocolate may harden before you are done.
Sprinkle the jimmy’s on a paper plate so that you can roll the marshmallows after dipping them in the jimmy’s
After rolling them in the jimmy’s set them back on the wax paper and refrigerate for about 30 minutes until they set up.
You can then put them in candy paper cups or minature cupcake papers.
