Chocolate Kahlua Truffles

12 oz	chocolate chips
4	egg yolks
1/3 c	kahlua
2/3 c	butter, unsalted
	ground almonds & cocoa powder, for rolling in

Laura's Notes:

I make alot of truffles over the holidays, but these are so good and easy, nice to have them on hand..hope my doctor isn't watching, she took my M&M's away :) enjoy
FORGET LOVE, I'D RATHER FALL IN CHOCOLATE. :)

Directions

Melt chocolate over simmering water. When melted, remove from heat and cool to room temp.
Add egg yolks, one at a time, stirring constantly until well blended. Mix in Kahlua and return to double boiler for 2 to 3 minutes, stirring constantly.

Pour mixture into the bowl of your mixer and beat in butter, one tablespoon at a time. Continue beating until mixture is light and airy.
Cover with plastic wrap and refrigerate 4 to 5 hours or overnight.

Make into 3/4 inch balls. Roll in cocoa and or nuts. keep in frig. these also freeze well. hope you enjoy. xoxoxo. just don't tell the doctor :)

Yum! I am a fan of truffles ! Almonds are so good for you! And butter is far superior to cotton seed oil and margarine. But semi-sweet choclate is in a healthy food group by itself. I say give up the m and Ma's, eat truffles !

I promise I didn't put in the cream!!!! Don't know what I was thinking getting that out for the Pic instead of the BUTTER!!!! "WONDERFUL BUTTER" Truffles are cooling now, and YES, I licked the beaters, spatula and ran my finger all around the BOWL!!!!!! MAGNIFICENT! You really need to BE PROUD!!!!! What a recipe:):):)
