Bailey's Irish Coffee Cream Fudge

Very smooth and silky fudge. I like to make this recipe and my other Bailey's Irish Cream fudge and give as gifts because they are both wonderful flavors. All my friends love love love this fudge!

Blue Ribbon Recipe

Notes from the Test Kitchen:
Irish coffee... only more wonderfully sinful! The fudge turned out remarkably smooth and creamy - We can't wait to make it again!


3/4 c
margarine or butter
3 c
1/2 - 3/4 c
evaporated milk
1/3 c
bailey's irish cream
1 Tbsp
instant coffee crystals
7 oz
jar marshmallow cream
1 pkg
vanilla morsels or butterscotch chips
1 tsp
vanilla extract

Directions Step-By-Step

In a small bowl combine Bailey's and coffee crystals. Microwave on high for 10 seconds. or until melted and dissolved
In a medium saucepan, over medium heat, melt butter,evaporated milk, sugar and marshmallow cream. Slowly add the Bailey's coffee mixture; stir well. Boil for 5 mins.
Remove from heat and stir in chips and vanilla extract. Stir for approx. 3-4 mins. until smooth. Pour into a foil lined 8x8" pan. Chill to set.

I have a question. My grandson (21 years old) is in college and He enjoys the 'care' packages I send him with goodies in it. I'm guessing Heather, that since everyone is saying the fudge has to be refrigerated, it wouldn't do well in a package that will be sent to Reno, NV? I know this would be a real winner in my fudge lovin grandson's eyes!

Mary - I have no clue what to tell you.I feel really bad that it didn't turn out. I think what you made would be great on ice cream!!! The recipe has worked for some and no others. I do want to thank you, however, for not posting a nasty comment like some have in the past. Keep trying and I wish you success. - Heather

This did not work for me:(. However I refuse to give up...just need to figure out what I did wrong....however what I made looks more like Baileys caramel which is just as tasty.
