Ingredients For ww strawberry cheesecake frozen yogurt truffles

  • 8 oz pkg
    cream cheese, low-fat, room temperature
  • 1/8 c
    sugar
  • 1 tsp
    pure vanilla extract
  • 3 c
    vanilla bean frozen yogurt or ice cream, low fat
  • 1 - 12 oz jar
    sugar free seedless strawberry jam
  • 1/2 c
    coconut, flaked

    Line a small baking she with parchment paper or silpat liner & put into freezer.

    STRAWBERRY CHEESECAKE FROZEN YOGURT: Into a food processor, add cream cheese, sugar & extract; process until smooth. Scoop vanilla yogurt & jam evenly over top; process until creamy, about 1 - 2 minutes. Scrape mixture into a metal bowl & freeze until firm, 5 hours.

    Place coconut in a small bowl. Remove prepared baking sheet from freezer. Scoop 12 scoops of frozen yogurt onto frozen sheet using a medium cookie or ice cream scooper; return to freezer. Working with one at a time, take each scoop & coat with coconut & return to frozen sheet.

    Freeze truffles until firm, at least 2 hours.

    TO SERVE: Let truffles soften slightly at room temperature before serving, 8 - 10 minutes.
