Toward the end of summer, the Woodward Hotel would serve the most incredible, warm apple/zucchini/spice cake dripping with a rich caramel butter sauce. Made from farm-fresh local ingredients, it was the perfect ending to a delicious meal and signaled the very beginning of the summers harvest.

  • BOUNTIFUL HARVEST CAKE:
  • 1/4 c
    shortening
  • 1 c
    sugar
  • 1 lg
    egg
  • 1 tsp
    vanilla
  • 1 c
    flour
  • 1/2 tsp
    baking soda
  • 1/2 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1/2 tsp
    cinnamon
  • 1/2 tsp
    nutmeg or cloves (your choice)
  • 1 1/2 c
    diced apples
  • 1 1/2 c
    shredded zucchini
  • 1/4 c
    chopped walnuts or pecans
  • CARAMEL BROWN BUTTER SAUCE:
  • 1/2 c
    butter
  • 1/2 c
    sugar
  • 1/2 c
    brown sugar
  • 1/2 c
    half and half
  • 1/4 tsp
    vanilla

    Cake: Cream shortening and add sugar. Add egg and vanilla. Then add baking soda, baking powder, salt, cinnamon and nutmeg (or cloves).

    Add flour. Stir in apples, zucchini and nuts with a spoon.

    Place batter into a prepared 8" square baking pan. Bake at 350 degrees for 45-50 minutes until tests done with a toothpick.

    Caramel Butter Sauce: Melt butter in medium saucepan. Add sugars and cream. Bring to a very gentle boil. Turn heat to low. Simmer stirring occasionally, uncovered, for 15 minutes. Remove from heat and add vanilla. Spoon generously over warm cake.
