Sift and measure flour. Add salt and baking powder, and sift again.
In a large bowl, cream shortening. Add 1 cup of the sugar gradually, and cream until fluffy. Add sifted ingredients alternately with milk and flavoring. Beat thoroughly after each addition.
Beat egg whites until stiff. Gradually add in the remaining 3/4 cup sugar to egg whites and fold into mixture. Pour batter into greased 9 inch round pans. Using parchment paper to line the bottom will yield a better result when removing from pan.
Bake at 350 degrees F (175 degrees C) for 25 to 30 minutes.
Cool, and frost with Creamy Frosting.
To make Prosperity Cake, add orange extract instead of almond.
