This cake was my entry into the Duncan Hines "Frosting Creations" contest. After 3 attempts of tying to enter it and 2 letters to support i finally gave up and just entered it as a regular recipe....let me know what you think!
1Pour the packet of "Frosting Creations" into the base mixture along with 1 tbsp of mint extract, and blend until the color is even; taste to see if the other tbsp is needed.
2Bake the white cake as directed and let it cool completely in the pans.
3Dissolve the jello in one cup of boiling water, stir well to dissolve then ad one half cup of ice water, stir and set aside until the cake is completely cooled.
4When the cake layers are cool, using a fork, poke holes all over the cake and make some of them deep. Pour the jello evenly all over the two cake layers and place the pans into the refrigerator to chill for at least 2 hours.
5Carefully remove the cake layers from the pans and assemble the cake. Garnish with fresh raspberries and mint. Place the cake back into the refrigerator until ready to serve or serve right away.
