I love this recipe so much, especially in the summer. Top your cakes and cupcakes with this "lick the bowl clean" frosting and then grate some fresh lemon and orange for a beautiful finishing touch to the top.

Ingredients

1 tsp
fresh lemon peel
3 Tbsp
butter
3 c
confectioners' sugar
2 Tbsp
fresh lemon juice
1 Tbsp
water
1 dash(es)
salt

Directions Step-By-Step

Add lemon peel to butter. Mix well.

Add half of sugar to creamed mixture gradually, blending well after each addition.

Combine lemon juice and water. Add to creamed mixture alternately with remaining sugar until it reaches desired consistency. Add salt.

Beat until smooth. Top with additional grated lemon peel to decorate.
