Wacky Cake

This is an all-time favorite in our family. It's been handed down for 3 generations now. It is quick and simple, no mixing bowl required. The cake comes out firm and moist, and can be eaten with or without frosting. This can be modified for a diabetic diet with no change in flavor.

Ingredients

1-1/2 c
flour
1 c
sugar or sugar substitute
1 tsp
baking soda
1/4 tsp
salt
3 Tbsp
cocoa
1 tsp
vanilla
2 Tbsp
vinegar
5 Tbsp
oil
1 c
water, warm

Directions Step-By-Step

In 8 x 8 pan, mix flour, sugar, baking soda, salt, and cocoa. Make 3 wells, add vanilla, vinegar, and oil. Pour water over all and mix until smooth.

Bake in 350 degree oven for 30 minutes or until knife inserted comes out clean. Cool and frost if desired.
