Ingredients For vanilla vodka cupcake shooters

  • 1 - 16 oz. pkg
    pound cake mix
  • eggs & water
  • 1/4 c
    sour cream
  • 3 3/4 tsp
    gelatin, unflavored (about 1 1/2 envelope or 1/4 oz. each)
  • 3/4 c
    vanilla vodka
  • 6 Tbsp
    vanilla vodka
  • 3/4 c
    white grape juice
  • 2 Tbsp
    sugar
  • 1 1/2 c
    butter, room temperature
  • 6 c
    confectioners' sugar
  • food coloring, your choice
  • decorations, your choice

How To Make vanilla vodka cupcake shooters

    Preheat oven to 350 degrees F. Line 42 mini muffin cups with cupcake liners. Prepare cake mix according to package directions with eggs & water, substituting sour cream for butter. Evenly divide batter amoung liners. Bake 10 - 15 minutes or until golden. Cool completely on racks.

    In a large bowl, sprinkle gelatin over 3/4 C vodka. Let stand 5 minutes until softened. In microwave safe bowl, microwave juice on HIGH in 1 minute intervals until very hot. Stir into vodka mixture until gelatin is dissolved. Stir in sugar until dissolved. Tint with color of choice. Chill until gelatin has consistency of mayonnaise, about 45 minutes.

    Using skewer, poke 6 - 7 holes into each cupcake. Transfer gelatin to a pastry bag fitted with small round tip; pipe into holes.

    On high speed, beat butter until fluffy. On medium, gradually beat in confectioners' sugar. Add remaining vodka; on medium high beat until fluffy.

    Evenly divide frosting amoung four bowls. Tint each a different color of your choice. Transfer to seperate pastry bags, each fitted with a large star tip. Pipe over cupcakes. Garnish as desired.
