Ingredients For vanilla mousse cheesecake

40nilla wafers, finely crushed

3 Tbspbutter, melted

4 - 8 oz. pkgcream cheese, room temperature

1 csugar, divided
-
1 1/2 Tbsppure vanilla extract
-
3 x lgeggs
-
1 - 8 oz. pkgcool whip, thawed

raspberries, fresh
How To Make vanilla mousse cheesecake

1Preheat oven to 325 degrees F.

2Mix wafer crumbs & butter; press onto bottom of 9" springform pan.

3Beat 3 pkg. cream cheese, 3/4 C sugar & 1 Tbsp vanilla with mixer until blended. Add eggs, 1 at a time, mixing on low speed after each just until blended. Pour over crust.

4Bake 50 - 55 min. or until center is almost set. Run knife around rim of pan to loosen cake; cool completely in pan.

5Beat remaining cream cheese, sugar & vanilla with mixer in large bowl until blended. Whisk in cool whip; spread over cheesecake. Refrigerate 4 hours. Remove rim of pan before serving cheesecake. Garnish with raspberries before serving.
