vanilla latte cupcakes

Once upon a time ago, one of my employees said to me, I think you need to create a vanilla latte cupcake...so I set out to and it turned out wonderful. Many people have made comment that it's their new favorite cupcake flavor. I hope you like it! Enjoy!

Ingredients For vanilla latte cupcakes

  • 2 3/4 c
    flour
  • 1 Tbsp
    baking powder
  • 3/4 tsp
    salt
  • 1/2 c
    hot water
  • 2 tsp
    instant coffee
  • 1 c
    butter, softened
  • 2 c
    sugar
  • 4
    eggs, room temp
  • 1 Tbsp
    vanilla bean paste
  • 1 c
    heavy whipping cream
  • FROSTING:
  • 3 c
    heavy whipping cream
  • 3/4 c
    powdered sugar
  • 1-2 tsp
    instant coffee (add more or less to taste)
  • 2-3 Tbsp
    white chocolate instant pudding
  • GARNISH:
  • raw sugar or decorator sugar
  • chocolate covered coffee beans

How To Make vanilla latte cupcakes

    Preheat oven to 350. Line cupcake pans with 24 liners.

    Sift together flour, baking powder, salt and set aside. Add coffee to hot water and stir to dissolve, set aside.

    Cream together butter and sugar, when light and fluffy add eggs one at a time, mixing well after each addition. Mix in vanilla and beat 3 min. Add half the flour mixture to sugar mixture mixing until incorporated, then add coffee and cream and mix until just incorporated, then add remaining flour mixture, mixing until blended, do not over mix.

    Fill liners 2/3 full and bake 17-20 min. or until toothpick inserted comes out clean. Remove from oven, allow to cool in pans 10 min. then remove from pans to cooling racks to cool completely.

    When cool, prepare frosting. Place cream and coffee in a medium bowl (chilled if preferred) mix on low until coffee is near dissolved then add powdered sugar and mix on high until soft peaks form, then add pudding and continue to beat on high until stiff peaks form. Frost cupcakes!!!

    Sprinkle with raw or crystal decorator sugar and a chocolate coated coffee bean if desired.
