Ingredients For tiramisu mousse cheesecake

  • 1 1/3 c
    nilla wafers (about 40 cookies), crushed
  • 3 Tbsp
    butter, melted
  • 4 - 8 oz pkg
    cream cheese, room temperature, divided
  • 3/4 c
    sugar
  • 6 Tbsp
    strong brewed coffee, cooled & divided
  • 3 x lg
    eggs
  • 1/3 c
    milk
  • 1 sm pkg
    instant vanilla pudding mix, dry
  • 2 c
    cool whip, divided
  • 1 square
    semi-sweet baking chocolate, coarsely grated, divided

How To Make tiramisu mousse cheesecake

    Preheat oven to 325 degrees F.

    Mix wafer crumbs & butter; press onto bottom of 13" x 9" baking pan.

    Beat 3 pkgs cream cheese, sugar, 1 tbsp coffee in a standing mixer until well blended. Add eggs, 1 at a time, mixing on low speed after each, just until blended. Pour over crust.

    Bake 28 - 30 minutes or until center is almost set. Cool completely.

    Beat remaining cream cheese in standing mixer until creamy. Add milk, remaining coffee; mix well. Add dry pudding; beat 2 minutes. Stir in 1 1/2 C cool whip. Spread over cooled cheesecake, sprinkle with 1/2 shaved chocolate. Refrigerate overnight.

    Garnish with remaining cool whip & remaining 1/2 shaved chocolate just before serving.
