This has been a spring standard for almost 50 years. Everyone seems to like it so I keep sharing it with neighbors now that it is just my husband and myself.

Ingredients

1 1/2 c
brown sugar, firmly packed
1/2 c
butter or butter flavored shortening
1
egg
2 c
all purpose flour
1 tsp
baking powder
1 tsp
baking soda
1/2 tsp
salt
1 c
sour milk (1 tbsp vinegar in 1 cup milk, let rest 5 minutes)
1 1/2 c
raw rhubarb sliced thinly

TOPPING

1/2 c
brown sugar, firmly packed
1 tsp
ground cinnamon
1/2 c
chopped nuts

Step-By-Step

1Cream butter and brown sugar. Add egg and beat until creamy.
2Sift flour, baking powder, baking soda and salt
3Add flour mixture and milk to sugar mixture. Stir in rhubarb. In small bowl mix topping ingredients. Sprinkle on batter
4Bake in 9-13 greased pan 350 degrees for 30-35 minutes
