One of my favorite brownie recipes, that belonged to my Gram. Ooey gooey goodness in every bite. Great with a cold glass of milk or a hot cup of coffee. Enjoy!

Ingredients For ~ those glorious brownies ~

  • 1 c
    sugar
  • 1 stick
    butter, softened
  • 2
    eggs
  • 3/4 c
    flour
  • 3 Tbsp
    unsweetened cocoa powder
  • 1 c
    chopped walnuts or pecans
  • 1 c
    coconut
  • FROSTING
  • 24 lg
    marshmallows or 2 1/4 cups mini
  • 2 c
    confectioners' sugar
  • 1/4 c
    softened, butter
  • 3 Tbsp
    cocoa powder
  • 4 1/2 Tbsp
    cream

How To Make ~ those glorious brownies ~

    Preheat oven to 350 degree F. Spray an 8 x 12 x 2 baking pan with non stick cooking spray - I use bakers joy. I also used a deep dish 9 inch pie plate, which when I make again I'll be sure to use the 8 x 12 as the frosting didn't have room to spread. My fault for changing...lol Cream sugar and butter, add the egg and mix well. Sift the flour and cocoa and add to the sugar mixture and beat until smooth.

    Stir in the nuts and coconut. Spread into prepared pan and bake for 20 - 25 minutes or until pick comes out clean.

    Spread marshmallows over cake, then spread frosting over marshmallows. Place back into oven and bake another 3 - 4 minutes.

    Spread icing with marshmallows, they don't have to be completely melted. Cool in pan and serve.
