Ingredients

2 c
flour
2 tsp
baking powder
1 1/2 tsp
baking soda
1 tsp
salt
2 tsp
cinnamon
2 c
sugar
1 1/2 c
oil
4
eggs
1/2 c
chopped nuts
2 c
grated carrots
1 can(s)
(8 oz.) crushed pineapple, drained

CREAM CHEESE ICING

1 pkg
(8 oz.) cream cheese, softened
1/2 c
butter
1 box
(1 pound) powdered sugar
2 tsp
vanilla

Step-By-Step

1Sift dry ingredients. Add sugar, oil and eggs.
Combine and beat until batter is smooth.

2Stir in carrots. When well blended, add nuts and pineapple. Mix thoroughly.

3Put batter into a greased and floured 13 X 9 inch pan.

4Bake at 350 degrees for 1 hour.

5Cream Cheese Icing:

Cream together cream cheese and butter.

6Add remaining ingredients and beat until fluffy.

7This is enough icing for a layer cake, 1/2 recipe will frost a sheet cake.
