Ingredients

3 c sugar
1 1/2 tsp cinnamon
3/4 tsp cloves, ground
2 c water
1 c strong brewed coffee
1 bx raisins
1 bx dates, chopped
3/4 c butter
4 1/2 c all purpose flour
1 1/2 tsp baking soda
1 1/2 Tbsp baking powder
3/4 tsp salt
3/4 c chopped pecans
1/2 c light corn syrup
1 c pecans, halved
2 Tbsp bourbon or rum (optional)

My family's history in Texas goes back to the 1850's, and this recipe has been a family holiday favorite for generations. It primarily contains only ingredients a ranch would have readily available. It's the perfect "non-fruitcake lovers" fruitcake!

Directions

Combine first eight ingredients in a saucepan and bring to low boil while stirring continually. Reduce heat and let simmer 5 minutes. Remove to cool.

Sift together flour, baking soda, baking powder and salt.

Once cooled to lukewarm, slowly stir the liquid spice/fruit mixture into the dry ingredients. Pour into two well-greased loaf pans.

Arrange pecan halves in a decorative pattern on the top of the loaves.

Bake 1 hour at 300 degrees.

With a brush, gently apply a coat of corn syrup over the cakes. (A few tablespoons of bourbon or rum may be added to the corn syrup.)

Continue baking one hour, or until a toothpick come out of the cakes cleanly. Cool.

For an adult dessert, a few tablespoons of bourbon or rum can be poured on each slice prior to serving.

I'd like to know about the size of loaf pans, too. I'm making this now. The sugar mixture is cooling and the flour mixture is ready to go. There sure is a large quantity of liquid vs dry! I have so much batter that I can't imagine only using two loaf pans like what I would use for a basic banana bread recipe.

Also, in the recipe, since the chopped nuts weren't added at some point in the directions, I have to assume that we add them after we mix the wet and dry ingredients. I would hate to have this recipe be a failure as its a costly recipe. Wish me luck!

I used a 15 oz box of golden raisins and an 8 oz. bag of dates in the recipe. I also use three loaf pans with great results. I have yet to taste the cakes but they sure look good! It took an hour using the smaller loaf pans. I took the cakes out of the oven after the first hour, used the bourbon with the Karo syrup and put them in the oven again. It didn't take more than 10 minutes for the cakes to be done after that using the toothpick test.
