If you're a fan of the basic Zucchini Bread, you need to give this recipe a try.

The Cinnamon Icing is a nice touch and adds a whole depth of flavor.

Ingredients

3/4 c
butter or margarine, softened
1/2 c
light brown sugar
1/2 c
granulated sugar
2 large
eggs
1 tsp
vanilla extract
1-3/4 c
all-purpose flour
1-1/2 tsp
baking powder
1 c
coconut
2 c
zucchini, peeled and grated
3/4 c
walnuts, chopped

CINNAMON ICING

1 c
powdered sugar
1 tsp
vanilla extract
1/2 tsp
cinnamon
2-1/2 Tbsp
milk
1-1/2 Tbsp
butter or margarine, melted

Directions Step-By-Step

Cream margarine, brown sugar and granulated sugar until fluffy. Add eggs, one at a time. Stir in vanilla, flour and baking powder. Mix thoroughly. Stir in coconut, zucchini, and walnuts.

Spread batter evenly into a greased 13 x 9 inch pan. Bake at 350 degrees for 40 minutes.

Combine icing ingredients as listed; mix well. Spread on cooled bars.
