Great and easy dessert in the spring or early summer. If you have frozen Rhubarb when in season, take some out during those winter months to keep us dreaming of warmer weather.

Ingredients

4 c
rhubarb cut into 1/2 in pieces
1/2 c
sliced strawberries
1 c
sugar
1 Tbsp
lemon juice
1 Tbsp
quick cooking tapioca

TOPPING

2/3 c
flour
1/2 c
quick cooking oats (oatmeal)
1/4 c
nuts, chopped
3 Tbsp
brown sugar
1/2 tsp
cinnamon
1/4 tsp
nutmeg
1/4 c
butter

Directions Step-By-Step

Preheat to 350.

In a bowl, combine rhubarb, berries, sugar, lemon juice and tapioca and transfer to a 8x8 lightly sprayed baking dish or non stick baking dish.

Combine flour, oats, nuts, brown sugar and spices in a bowl. Cut in butter with a pastry blender. Sprinkle on fruit and bake for 45 minutes to 1 hour or golden and bubbly.
