  • FOR THE CAKE
  • 1 c
    butter, softened
  • 2 c
    sugar
  • 3 c
    sifted cake flour
  • 2 1/2 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1 c
    whole milk
  • 2 Tbsp
    sour cream
  • 1 tsp
    vanilla
  • 4
    egg whites
  • FOR THE FROSTING
  • 1/2 c
    butter, softened
  • 9 c
    powdered sugar, sifted
  • 5-7 Tbsp
    whole milk
  • 1 tsp
    almond extract
  • garnish: sparkling sugar

How To Make tastes just like wedding cake

    Preheat oven to 350F. Spray 3 (8 inch) round cake pans with nonstick baking spray with flour. Line bottoms of pans with parchment paper; spray with nonstick baking spray with flour. Set aside. For cake: In a large bowl, beat butter and sugar at medium speed with an electric mixer until fluffy, 3-4 minutes, stopping occasionally to scrape sides of bowl. In a medium bowl, whisk together flour, baking powder, and salt. In a small bowl, combine milk, sour cream, and vanilla. With mixer on low speed, add flour mixture to butter mixture in thirds, alternating with milk mixture, beginning and ending with flour mixture. Beat until combined.

    In another large bowl, using clean beaters, beat egg whites at high speed until stiff peaks form. Stir one fourth of egg whites into batter. Gently fold in remaining egg whites. Divide batter evenly among prepared pans, gently smoothing tops with an offset spatula. Bake until a wooden pick inserted in center comes out clean, approximately 22 minutes. Let cool in pans 10 minutes. Remove from pans, and let cool completely on wire racks.

    For frosting: In a large bowl, beat butter at medium speed with an electric mixer until creamy. Gradually beat in powdered sugar, adding milk, one tablespoon at a time, until frosting reaches a spreadable consistency. Ad almond extract, beating until combined. Spread frosting between layers and on top and sides of cake. Garnish with sparkling sugar, if desired.
