Sweet Rice Cake "MITSIKO" (Gluten Free)
rice flour, sweet
butter or margarine
1Use a 9 x 13 Pan or for thicker Cake use a Square Pan. Spray lightly with Pam or cooking spray.
2Mix sugar and butter together. Add eggs.
3Add Sweet Rice Flour, baking powder, and milk. Mix all ingredients well.
4Preheat Oven to 325 F. Bake for 45 minutes to 1 hour. It will raise slightly and be spongy to the touch. Ovens vary on time, depending on whether you have Gas or Electric.
5Baking Tip: I purchase my Sweet Rice Flour at Oriental, Korean stores, Speciality Aisle in grocery store or whole food markets, although you might find it in some grocery stores.
