Strawberry Nut Cake

This recipe belongs to my son's mother-in-law, Constance. It is so good and refreshing plus a beautiful cake. I have made it myself a few times and find it to be very easy to make.

Peggi Tebben has provided us with a pic since she made it a couple of days ago. She did a great job, too.

Ingredients

1 box
duncan hines white cake mix
1 small
box strawberry jello (dry)
1 small
box vanilla instant pudding mix
1/2 c
canola or vegetable oil
1 stick
butter, softened
1/2 c
milk (i use 1%)
4 medium
eggs
1 c
fresh (or frozen) strawberries, chopped
1 c
chopped pecans

ICING:

16 oz
powdered sugar
1 stick
butter, softened
1/2 c
fresh (or frozen) strawberries, chopped
1/2 c
coconut
1/2 c
chopped pecans

Directions Step-By-Step

CAKE:
Mix all ingredients and bake in three 9" floured and greased cake pans at 350 for 25 - 30 minutes. Cool in cake pans for 10 minutes, remove and cool completely before frosting.

ICING:
Mix all ingredients together and spread between, on sides and top of cooled cake layers.

Our fellow member, Rose Rauhauser, made the cake and froze it and then iced it once the cake had thawed. Thanks, Rose, for sharing this tip.
