Ingredients For strawberry cupcakes & frosting

  • CUPCAKES:
  • 1 c
    sugar
  • 1 stick
    butter, room temperature
  • 2 x lg
    eggs
  • 2 tsp
    pure vanilla extract
  • 1 tsp
    strawberry extract
  • 1 1/2 c
    all purpose flour
  • 1 3/4 tsp
    baking powder
  • 1 sm pkg
    instant vanilla pudding mix, dry
  • 1/2 c
    milk
  • 12 - 14
    strawberries, fresh, chopped & mashed lightly
  • FROSTING:
  • 2 stick
    butter, unsalted, room temperature
  • 1 dash
    salt
  • 3 1/2 c
    confectioners' sugar
  • 1/2 tsp
    pure vanilla extract
  • 1/2 tsp
    strawberry extract
  • 6 md
    strawberries, fresh, pureed
  • DECORATIONS:
  • pink &/or white candy decorations (see link)

How To Make strawberry cupcakes & frosting

    CUPCAKES: Preheat oven to 350 degrees F. In a standing mixer with paddle, cream sugar & butter until light & fluffy. Add eggs, 1 at a time, until combined. Add extracts; combine well. In another bowl, add flour, powder & dry pudding; combine well. Add to creamed mixture & mix well. Stir in milk until batter is smooth. Add mashed strawberries; mix well. Fill muffin cups 3/4 full & bake 20 minutes or until golden brown. Cool completely in pan & then transfer to wire rack.

    FROSTING: In standing mixer with whisk, blend butter & salt on medium high speed until fluffy. Reduce speed to low & add confectiners' & blend well. Add extracts & strawberry puree; blend well.

    In a pastry bag fitted with large star tip, swirl frosting on cupcakes & decorate with pink &/or white candy decorations.
