1 stickbutter, room temperature

2 x lgeggs

2 tsppure vanilla extract

1 tspstrawberry extract

1 1/2 call purpose flour
-
1 3/4 tspbaking powder
-
1 sm pkginstant vanilla pudding mix, dry

1/2 cmilk
-
12 - 14strawberries, fresh, chopped & mashed lightly
- FROSTING:
-
2 stickbutter, unsalted, room temperature
-
1 dashsalt
-
3 1/2 cconfectioners' sugar
-
1/2 tsppure vanilla extract
-
1/2 tspstrawberry extract
-
6 mdstrawberries, fresh, pureed
- DECORATIONS:
-
pink &/or white candy decorations (see link)
How To Make strawberry cupcakes & frosting

1CUPCAKES: Preheat oven to 350 degrees F. In a standing mixer with paddle, cream sugar & butter until light & fluffy. Add eggs, 1 at a time, until combined. Add extracts; combine well. In another bowl, add flour, powder & dry pudding; combine well. Add to creamed mixture & mix well. Stir in milk until batter is smooth. Add mashed strawberries; mix well. Fill muffin cups 3/4 full & bake 20 minutes or until golden brown. Cool completely in pan & then transfer to wire rack.

2FROSTING: In standing mixer with whisk, blend butter & salt on medium high speed until fluffy. Reduce speed to low & add confectiners' & blend well. Add extracts & strawberry puree; blend well.

3In a pastry bag fitted with large star tip, swirl frosting on cupcakes & decorate with pink &/or white candy decorations.
