This is one of my family's favorites. I got my inspiration for this cake while drinking a starbucks strawberry Frappuccino. My recipe is in grams but i'll do my best convert it to American measures. Enjoy
1Preheat the oven to 350F. Grease 2 8x2 inch cake pans buttered and lined with parchment
2Beat the butter for 1 min until creamy and gradually beat in the sugar
3Beat the egg whites until stiff. Stir the egg yolks, dissolved coffee and vanilla into the butter and sugar mixture.
4Sieve the flour, cornstarch and baking powder into the mixture and stir to combine. Add grated dark chocolate. Fold in the egg whites and mix gently. Pour batter equally in to two cake pans and bake for 35-40 mins or until sponge springs back. leave to cool.
5Puree the strawberries in a food processor for 40-50 seconds. Whip the heavy cream and confectioners sugar in a bowl, add the puree and whipp until stiff.
6when the cakes are cooled, sandwich the cakes together with a thick layer of chocolate cream cheese and the strawberry cream. Spread the remainder of the cream onto the top and sides of the cake. Cover the sides in grated chocolate and melt the remaining chocolate to drizzle over the top. Refrigerate for 15mins before serving. Enjoy!!
