I made this cake for my grandmother's 92nd Birthday. She loves flowers as much as I do, so it was decked out with silk flowers to give it a touch fit for a Queen! The flavor was rich and delicious and if you can use your own home-grown strawberries like I did, you get an extra satisfaction of making it "homemade".

Ingredients

CAKE INGREDIENTS

1 pkg
white cake mix
1 pkg
strawberry flavored gelatin (3oz)
1 c
vegetable oil
4
eggs, slightly beaten
1/4 c
water
3/4 c
mashed strawberries

FROSTING INGREDIENTS

4 oz
unsalted butter, softened
4 oz
cream cheese, softened
2 c
powdered sugar
1 tsp
pure vanilla extract

Step-By-Step

1Combine cake mix and gelatin powder in a large bowl.

2Beat in oil, eggs, water, and strawberries.

3Pour into 2 9-inch round greased and floured cake pans.

4Bake in a 350 degree oven for 30 minutes, until a toothpick inserted in center comes out clean.

5Cool completely before frosting

6For the frosting, beat together the butter and cream cheese with an electric mixer

7With the mixer on low speed, add the powdered sugar a cup at a time until smooth and creamy.

8Beat in the vanilla extract

9Frost bottom layer first with cream chese frosting. Cover bottom layer with fresh sliced strawberries then add top layer and frost all over.

10Cover top of cake with more sliced strawberries and keep cool until serving.

11I like to add silk flowers around the bottom of the cake to give it a "frilly" look. Get creative with your ideas & everyone will be happy!
