One of my favorite, moist cakes that I make often. Great w/ a hot toddy or hot cocoa.

Ingredients For spiced-up rum cake

  • 1 pkg
    2-layer spice cake mix
  • 1 c
    milk
  • 1/3 c
    canola oil, or vegetable oil
  • 1/4 c
    sour cream, i used light
  • 1/4 c
    rum
  • 4 lg
    eggs
  • 1 tsp
    pumpkin pie spice
  • 1 c
    powdered sugar
  • 1 tsp
    melted butter
  • 1 Tbsp
    rum
  • 1-2 tsp
    water

How To Make spiced-up rum cake

    Heat oven to 350. Spray a 10"-bundt pan w/ cooking spray. In lg bowl combine, cake mix, milk, oil, sour cream, rum, eggs, and pumpkin pie spice.

    Beat w/ mixer on low until just moistened. Beat on medium for 2 mins. Pour batter into pan. Bake 35-40 mins, or until a toothpick inserted near center comes out clean.

    In small bowl, combine powdered sugar, butter, rum and 1-2 tsp water until glaze is a thin consistancy. Drizzle glaze over cooled cake.
