|10 Tbsp||butter, softened|
|1 tsp||strawberry extract|
|1-3/4 c||self-rising flour|
|1/4 c||strawberries, finely chopped, drained|
Heat oven to 325. Spray 12 muffin cups w/ cooking spray. In lg bowl, cream together butter and sugar until fluffy.
Beat in eggs, one at a time. Stir in strawberry extract. Stir flour into mix until blended. Fold strawberries into batter.
Spoon batter evenly into muffin cups. Bake 20 mins, or until a toothpick inserted in center comes out clean. Frost as desired or eat as is!
