Kids wanted chocolate cake last night, for National Chocolate Cake Day. I'm dieting so didn't want a big cake sitting around to tempt me. So, I made one of my favorite moist little cakes and a creamy home made chocolate frosting. It's gone, so I'm thinking they liked it just a little. LOL

Ingredients For ~short order cake ~

  • 1 c
    flour
  • 1 c
    sugar
  • 1/2 c
    hershey's cocoa
  • 1 tsp
    each - baking powder & baking soda
  • 1 c
    hot water
  • 1
    egg
  • 1/4 c
    melted butter
  • FROSTING
  • 3 Tbsp
    butter, softened
  • 3 - 3 1/2 Tbsp
    cocoa, unsweetened
  • 1 1/4
    to 1 1/2 cups - confectioners' sugar or enough to reach desired consistency
  • 1/2 tsp
    vanilla
  • 3 Tbsp
    cream or enough to reach desired consistency

How To Make ~short order cake ~

    Preheat oven to 350 degree F. Grease an 8 inch baking pan. In a medium mixing bowl, combine sugar, flour, cocoa, baking powder and baking soda. Whisk on the hot water. Add egg and melted butter and mix well. Pour into prepared pan. Bake for 30 - 35 minutes or until pick comes out clean. Cool on rack. Icing: In a medium bowl, sift together the sugar and cocoa. Set aside. Cream butter until good and smooth. Beat in sugar alternating with cream. Beat in vanilla. May need to add more sugar and cream to reach your desired consistency.

    Frost cooled cake and serve. For an added treat I added some pecans to the top.
