Ingredients

2 c	flour
1/2 c	sugar
2 1/2 tsp	baking soda
2 tsp	instant coffee
1/2 tsp	salt
1	egg
1 c	milk
1 stick	butter melted
1 tsp	vanilla
3/4 c	mini choc chips

found this years ago on my first internet cooking trip. i have tried several but these are my favorite. sometimes i add a strusel or sugar topping.

Directions

mix the dry ingredients. mix the wet ingredients. comine the two and fold in the choc chips. stir until just moistened. pour into 12 muffin tin or 6 of the king size muffin tin. can add a struesel on top or sprinkly with turindo sugar. for a dessert treat, warm in microwave and spread a little chocolate hazlenut spread on them.

My youngest son ( who has made me a grandma) loves cappuccino muffins, and his favorite muffin shop went out of business, so I'll be making these for him, thanks
