One of my favorite cookbooks is a Mennonite Community Cookbook. It's full of absolutely delicious rustic simple meals that are made from scratch in the amish/mennonite households... and Naturally, the biggest section is the dessert section. This cake caught my eye and boy was it tasty! I hope you enjoy it as much as I do.
Preheat oven to 350 degrees F. Cream shortening then gradually add sugar and beat till fluffy. Add eggs and beat thoroughly
Sift Flour, measure then add salt, bakingsoda, and spices... sift again.
add dry ingredients alternately with the sour milk and beat thoroughly after each addition. Pour into two 9" greased layer pans, and bake for 30 minutes or till toothpick inserted in the center comes out clean.
for filling: combine cornstarch and sugar. Add water and raisins. Cook in a double boiler until thick and clear (stirring often so it doesn't stick) then add butter and remove from the heat.
Spread between the layers and on top of the cake when the cake has cooled.
