Ingredients For roasted garlic & parmesan cheesecake (cheeseball)

    roasted garlic head (see below)
  • 2/3 c
    almonds, slivered, toasted
  • 2 - 8 oz pkg
    cream cheese, room temperature
  • 3/4 c
    parmesan cheese
  • 1/8 tsp
    salt
  • 1 - 8 oz pkg
    cream cheese spread, plain, chive & onion, sundried tomato & basil or garden vegetable, room temperature (tub)
  • EQUIPMENT NEEDED:
  • 3
    round cookie cutters, 4 1/2", 3 1/2" & 2"
  • offset spatula
  • pastry bag with #21 star tip
  • spread knife
  • SERVE WITH:
  • assorted crackers

    CHEESECAKE: In a food processor, combine 2 pkg cream cheese, parmesan, salt & cooled garlic; pulse until smooth. Add nuts; pulse until just mixed.

    MOLD CHEESE: Line all cookie cutters with plastic wrap. Divide cheese mixture among the cutters, filling to the top of each; level & smooth top with an offset spatula. Fold plastic wrap over tops & flip upside down onto dish. Refrigerate at least 5 hours or up to 3 days.

    THE DAY OF SERVING: Remove cheese from cutters; unwrap. Set 4 1/2" round on a small 6" round cake board or stand. Dip offset spatula into warm water, dry off & use to even out "wrinkles" in cheese. Add 2nd layer with 3 1/2" round using the same technique. Top off with 2" round using the same technique, so that it looks like a 3 tiered cake.

    DECORATE: Transfer cream cheese spread (whatever flavor you decide on) into a pastry bag with star tip. Pipe scallops around 4 edges of cake.
