I recently got this recipe from my cousin and made it for the first time today. Have not tasted it yet, but she says it is great.

Ingredients

1 1/2 c
brown sugar, lightly packed
1/2 c
shortening
2
eggs
3/4 c
milk
2 c
all purpose flour
1 tsp
baking soda
1/2 tsp
salt
1 tsp
vanilla extract
2 c
chopped rhubarb

Step-By-Step

1Preheat oven to 350 degrees. Grease and flour a 9 X 9 pan. Mix together the shortening and brown sugar. Add the eggs and milk & mix well.
2Add the dry ingredients and mix well. Pour into prepared pan. Sprinkle the following topping over the mixture:
TOPPING:
1/2 cup sugar
1/2 tsp. cinnamon
1/2 cup coconut

Bake for 45 minutes or until a toothpick inserted into the center comes out clean.
