Rasparetto Cream Cheese Cake

I attended my niece, Amy's wedding. Her wedding cake was out of this world. I decided to recreate it and this is the result.

Ingredients

1 box
white cake mix
16 oz
cream cheese
1 1/4 c
amaretto liqueur
1 jar(s)
raspberry preserves or jam, seedless
3
eggs or egg whites
1 c
powdered sugar

Directions Step-By-Step

Make a box mix but substitute 8 oz CREAMCHEESE for OIL. Substitute 1 cup of AMARETTO LIQUEUR for WATER. Use 3 eggs or egg whites. Make a 2 or 3 layer cake with seedless Raspberry Jam or Preserves warmed as filling between layers.
Frost with 8 oz of CREAMCHEESE mixed with a cup of powdered sugar and 1/4 cup amaretto to thin to a spreading consistency. If too thick use more amaretto. You can warm amaretto to eliminate alcohol but I don't. This cake was always a hit and requested by family and friends for parties. It is dense and moist and tastes nothing like a box cake.
