Ingredients For rainbow birthday cake

  • 1 box white cake mix
  • 1 cup sugar
  • 1 cup flour
  • 1/8 tsp salt
  • 1 1/3 cups water
  • 3 eggs
  • 1 cup sour cream
  • 1 tsp vanilla
  • 6 or number desired, food colors
  • DECORATOR ICING
  • 2 pound bag confectioner's sugar ( 5 lb. to double)
  • 1 cup (1 stick, easier) crisco (2 1/2 cups or 2 1/2 sticks) to double
  • 1/2 cup water (1 1/4 cup to double)
  • 1 tsp. salt (2 1/2 tsps. to double)
  • 2 tsps. clear vanilla extract, wilton (5 tsps. to double)
  • I RECCOMEND THE SMALL BATCH IF USEING FONDANT TO DECORATE AS IT WILL COVER THE LAYERS. IF DECORATING WITH COLORED ICING MAKE THE DOUBLE BATCH AND THEN MORE IF NEEDED, DEPENDING ON YOUR SKILLS AND HOW MUCH YOU MAY NEED.

How To Make rainbow birthday cake

    Mix the water,eggs, sour cream, and vanilla with paddle attachment then add the other four ingredients. Makes about 7 1/2 cups batter to fill two full 8″ rounds, Bake as directed by box instructions. Cool completly. Stack and ice with white frosting. For 6 colors as shown you will need to make three batches each divided in half into two pans adding a different color to each pan.

    To decorate use a clay extruder to push out long strips of fondant colored to match cake layers, or use decorator icing colored to match in a decorator bag with a round decorating tip. Useing a turntable to spin the cake as you decorate will make this easier.

    Roll out fondant balls or use gumballs for top.

    To make icing: Beat all together at high speed for 10 minutes then on low for another 5 mins. Frost layers with white then separate into bowls for other colors. Not a good idea to use a hand mixer for this.
