Ingredients

3
eggs
2/3 c
pumpkin puree
2 tsp
cinnamon
1 tsp
ginger
1 tsp
lemon juice
1 c
sugar
3/4 c
self rising flour
1/2 tsp
nutmeg
1 tsp
vanilla
8 oz
cream cheese at room temp
1/2 stick
butter at room temp
1 c
powdered sugar
1/2 tsp
vanilla

Step-By-Step

1Preheat oven to 350 degrees. Spray a large cookie sheet with sides with cooking spray, place a sheet of wax paper down and spray wax paper. Set aside.
2Mix first 9 ingredients in a large bowl until well mixed. Pour onto greased wax paper and bake at 350 degrees for 15 minutes or until toothpick comes out clean.
3When cake is done spray another sheet of wax paper and place on top of done cake. invert onto a thick towel. While cake is still warm not hot roll into a roll and set aside until completely cool
4Mix cream cheese, butter, vanilla,and powder sugar until blended well.
5Unroll cake remove wax paper add filling and roll back up removing bottom wax paper as you go.
