- 2 c flour
- 2 c sugar
- 2 eggs, lightly beaten
- 2 tsp. baking soda
- 2 tsp. vanilla or almond extract (i like 1 tsp. of each)
- 1-20oz. can crushed pineapple, do not drain
- 1/2 c chopped nuts of choice
- opt. zest of 1 lemon
Grease a 9x13 pan.
Mix all ingredients BY HAND!!!Until well combined.
Bake for 25 minutes
Reduce heat to 300F and bake 10 more minutes or until tester comes out clean. Cool.
Spread with frosting
8 ounces soft cream cheese. (may used reduced fat)
1/2 stick soft butter
2 tsp. vanilla
1-3/4c powdered sugar
1/2 c chopped nuts of choice (same as used in cake)
Place all in a bowl and use a mixer to beat until smooth.
