    eggs
  • 1/4 c
    whole milk
  • 2 tsp
    vanilla
  • 1 1/2 c
    cake flour
  • 3/4 c
    sugar
  • 1 tsp
    baking powder
  • 1/4 tsp
    salt
  • 3/4 c
    unsalted butter, softened
  • 4 c
    sliced fresh nectarines
  • 1 c
    fresh blackberries
  • 1 c
    fresh blueberries
  • 1/4 c
    honey
  • 2 Tbsp
    almond flavored liqueur
  • 1 tsp
    orange zest
  • sweetened whipped cream

How To Make pound cake with berries and nectarines

    Preheat oven to 350F. Spray a 9x5 inch loaf pan with nonstick baking spray with flour. Set aside. In a medium bowl, whisk together eggs, milk, and vanilla. In a large bowl, stir together flour, sugar, baking powder, and salt. Add butter and half of egg mixture to flour mixture; beat at low speed with an electric mixer until combined. Increase speed to medium high; beat until fluffy, approximately 1 minute. Scrape down sides of bowl, and add remaining egg mixture, 1/4 cup at a time, beating 30 seconds after each addition. Spoon batter into prepared pan, smoothing top with an offset spatula.

    Bake until a wooden pick inserted in center comes out clean, approximately 1 hour. Let cool in pan 10 minutes. Remove from pan, and let cool completely on a wire rack. Cut into slices. In a medium bowl, stir together nectarine, berries, honey, liqueur, and zest. Let stand 5 minutes. Serve over pound cake slices with whipped cream.
