small fresh plums, peeled and pitted
brown sugar, packed
lemon extract, or lemon juice
Mix together brown sugar and melted butter. Spread into the bottom of a 9" cake pan. Place plum pieces on top of brown sugar mixture.
Beat eggs and granulated sugar until thick and lemon colored. Add milk, lemon zest, and both extracts.
In a second bowl mix together dry ingredients. Add to egg mixture. Mix well.
Bake 30-35 minutes until browned and a toothpick inserted in the center is removed clean.
Let cool 5-10 minutes and invert onto a plate.
